Bo is pursuing his Ph.D degree in food science. He received his bachelor’s degree in China in food science and engineering. He is currently working on the nutrients and anti-nutrients of African indigenous Solanum vegetables, by means of LC-MS, GC-MS, column chromatography, NMR, and different bioactivity and toxicity assays. His study is part of a joint effort to promote the cultivation and consumption of African indigenous vegetables in Africa, improve health and nutrition, and boost local and regional economy.
